01 / ABOUT THE PLACE

About this place

The moment the bowl lands, the rich, toasty aroma of shrimp hits first. At Aishin, the house specialty is Ebisuku Tantanmen, an inventive hybrid that brings together the concentrated umami of a prawn bisque with the bold structure of classic tantanmen. A mellow, house-made sesame paste base gains brightness and depth from aromatic chili oil and numbing pepper notes, clinging effortlessly to slender, straight noodles. The experience does not end with the noodles: diners can add oirizo—a small bowl of rice topped with seared cheese—straight into the leftover broth, turning the remaining soup into a decadent, spoonable risotto down to the final drop.

Mapo Noodles and Sardine Broths Built for Rice

Alongside the shrimp bisque specialty, Aishin's mabomen draws an equally devoted following, ladling a thick, generous mapo sauce over a broth brewed with dried sardines (niboshi). Packed with tofu and minced meat, the sauce is enlivened with fragrant Sichuan peppercorns and fresh shiso leaves, prompting many diners to ladle the remaining mapo sauce over a side of rice once the noodles are finished. For those seeking non-spicy options, the kitchen also turns out Konjiki Niboshi Chukasoba, a clear, golden broth simmered to highlight the clean sweetness of white-bellied dried sardines, as well as Seabura Johnny, a punchier bowl defined by rich dark soy sauce and scattered pork backfat.

Counter Service and Straightforward Ordering

Inside, the shop offers an intimate counter-focused layout where orders are placed via a ticket vending machine by the entrance. Because the machine accepts cash only, having banknotes or coins ready ensures a seamless transaction before taking a seat. Whether for a solo lunch or dinner, it provides a quiet, unpretentious setting to focus entirely on deeply flavored broths and thoughtfully paired noodles.
